It's also not too tough to make this delicious restaurant style curry that goes well with chapathi, appam or fried rice. Here is how to prepare it easily at home.
Ingredients
3 small potatoes
½ carrot
½ cup cauliflower florets
4 beans
2 tbsp green beans
3 onions
1 bell pepper
2 tomatoes
3 green chilies
1 tbsp ginger – garlic paste
Garam masala
1 small cinnamon stick
3 cloves
3 cardamom pods
1 bay leaf
8 pepper corns
2 tbsp coriander powder
1 tsp turmeric powder
1 tbsp chili powder
1 tbsp fresh cream
Kasuri methi or dried fenugreek leaves
Oil as required
Salt as required
Preparation
Toast the whole spices and grind them into fine powder
Heat oil in a pan
Add the vegetables and lightly fry them
Keep them aside to be used later
Fry the bell pepper and onions in the same pan
Heat some more oil
Sauté onions and green chilies
Add ginger – garlic paste and the masala powders
Sauté well
Now add tomato puree
Cook until the tomato is cooked nicely and the mixture turn thicker
Into it add powdered masala, fried vegetables, salt and water as required
Close the lid and cook on low flame for 10 minutes
Add fried bell pepper and onions too
Cook for another 3 minutes
Add fresh cream, dried fenugreek leaves and chopped coriander leaves
Mix well
