Dosas are the quintessential south Indian breakfast. Period. It is easy to make, goes with many a side dishes, light on stomach – overall, dosas could give you a perfect start for the day.

But in this age of rushed working hours and busy lifestyle, the tasks of remembering to soak the grains, grind them and keep them in room temperature for a specific period so that it would rise to perfection could be a bit too much. Ingredients
1 glass urad dal
¼ tsp fenugreek seeds
5 glasses rice powder
3 glasses water
2 tsp salt

Preparation
Soak urad dal and fenugreek seeds for at least two hours
Grind these in a mixer jar or a grinder
Into this add rice powder and salt
Mix well using your fingers; mixing with your fingers help the batter rise nicely
Keep the batter aside for eight hours or overnight
Grease a hot dosa pan with sesame oil or ghee
Pour a ladle full of batter
