Ingredients
1 coconut
¼ cup raw rice
3 cups milk
¾ cup sugar
Preparation
Wash the raw rice and soak for at least an hour
Remove the flesh from the coconut shell
Remove the brown skin using a sharp knife or a peeler
Cut the coconut into small pieces and crush in a mixer jar
Add 1 cup milk and blend well into fine paste
Squeeze out the coconut extract using a strainer or a piece of cotton cloth
Put the coconut back into the mixer
Into it add the soaked raw rice and two cups milk
Grind well
Add this coconut – rice mixture into the coconut milk extract
Add sugar too
Mix well before boiling it in a thick bottomed pan
Stir continuously until it thickens
After it has cooled down, blend again in a mixer jar
Pour into an air tight container
Keep it in the freezer for at least eight hours
After the ice cream is set, blend it again in the mixer
Pour this into back into the container and freeze for another eight hours
Delicious and smooth coconut ice cream is ready!
