Check out this really easy coconut chutney recipe that could be made even if you do not have a mixer or traditional grinder at home. This chutney tastes amazing with soft appam.
Ingredients
1 ½ cups grated coconut
1 tsp chili powder
½ cup shallots (chopped)
Salt as required
1 tbsp coconut oil
1 tsp mustard seeds
3 dried chilies
Curry leaves as required
Preparation
Keep 1 tbsp chopped shallots aside for tempering
Mix the remaining shallots, grated coconut, chili powder and salt nicely using your fingers
Heat coconut oil in a thick bottomed pan
Splutter the mustard seeds
Sauté the shallots, dried chilies and curry leaves
When the shallots turn light brown in colour, add the coconut mixture
Mix well
Stir fry for 3 minutes on low flame with the lid on
Tasty coconut chutney is ready!
