Ingredients
500 ml roasted instant rice powder or Instant appam/idiyappam powder
2 cups first extract of coconut milk
8 tbsp sugar
1 ½ tsp black sesame seeds
2 eggs
A pinch of salt
Preparation
Take the rice powder in a bowl
In another bowl, beat the egg with a pinch of salt and sugar. You could add some coconut milk if required
Now add the roasted rice powder into it
Add the coconut milk too
Mix into batter that is lighter than dosa batter
Add sesame seeds
Mix well
Keep the batter aside for half an hour
The achappam mould should be washed, greased with coconut oil and dried under the sun on the previous day to make the perfect achappam
Heat oil in a pan
Dip the mould into the batter
Immerse the batter coated mould in boiling oil
Once the achappam's turn light gold shade, pull out the mould and drain excess oil
Serve achappams hot with tea
