Malayalis love jackfruit. Its versatility allows people to create amazing dishes using every single part of the fruit. In addition, it is also an excellent alternative to non-vegetarian curries. Try this unique recipe of jackfruit seed masala curry that tastes like meat curries.
Ingredients
1 cup jackfruit (peeled and cut into small pieces)
1 onion
20 shallots
2 green chillies
Chopped ginger and garlic
Curry leaves
3 tbsp coconut oil
½ tsp turmeric powder
1 ¼ tsp chilli powder
½ tsp garam masala
A pinch of cumin powder
¼ tsp pepper powder
½ tsp fennel powder
½ tsp fennel seeds
½ tsp mustard seeds
2 dried chillies
Salt as required
Preparation
Pressure cook the jackfruit with salt until two whistles
Do not add too much water as the jackfruit seeds may be overcooked
Heat coconut oil in a pan
Sauté fennel seeds and ginger – garlic
Add onion, shallots, green chillies and salt
Sauté well
Add curry leaves when these ingredients begin to change colour
Sauté until they turn golden
Lower the flame before adding turmeric powder, chilli powder, garam masala, coriander powder, cumin powder and pepper powder
Sauté until the raw smell of the powders is gone
Add 1 more tsp of coconut oil
Now add the cooked jackfruit seeds
Pour one and a half cups of hot water too
Boil for 5 minutes
Cook for at least 15 minutes on medium flame
Add the fennel powder when the gravy begins to thicken
For the tempering, heat oil in a pan
Splutter mustard seeds and dried chillies
Add this tempering into the curry
Mix well
Enjoy jackfruit masala curry with rice, appam, puttu or porotta.
