Neyyappam, a traditional tea time snack from Kerala, always tastes of nostalgia and wayside teashops. Here is an easy recipe to make neyyappam that is crispy on the outside and fluffy and soft inside without using baking soda.

Ingredients

½ kg rice flour (unroasted and coarse)

100 gm all purpose flour

½ tsp cardamom powder

¼ tsp cumin powder

½ tsp dried ginger powder

300 gm jaggery

1 cup water

2 ripe bananas

¼ tsp salt

2 tbsp ghee

½ cup coconut shards

1 tsp black sesame seeds

Oil to fry

Preparation

Mix rice flour, all purpose flour, cardamom powder, dried ginger powder, cumin powder and salt in a bowl

Blend the ripe bananas in a mixer jar

Add this into the dry ingredients

Now add the jaggery syrup

Mix well to make a thick batter

Add some more water if you prefer it looser

Keep the batter aside for at least two hours

Heat ghee in a pan

Fry the coconut shards

Add the black sesame seeds when the coconut shards turn brown

Add these into the batter

Mix well

Meanwhile, heat oil in another pan

Pour a ladle full of batter into the hot oil

Fry on medium flame until it turns brown in colour

Flip and cook the other side too

Enjoy the neyyappam with black tea.
