Ingredients
2 tbsp hot water
1 ½ tsp yeast
2 tbsp semolina
1 cup water
½ kg rice flour
2 cups water
Salt as required
1 tbsp sugar
½ kg beef (cut into small pieces)
Oil as required
2 chopped onions
5 green chilies
1 tbsp chili powder
2 tbsp coriander powder
1 tsp turmeric powder
1 tbsp meat masala
1 piece ginger
1 bulb garlic
1 tsp pepper corns
Salt as required
½ cup tender coconut flesh (sliced into half inch pieces)
2 sprigs curry leaves

Preparation
Mix yeast and hot water
Keep for 5 minutes for the yeast to activate
Boil semolina with some water
Mix the rice flour with water, salt and sugar
Mix the yeast, semolina mixture with the rice flour batter
Mix well and set aside
Allow the batter to rise
For the filling, heat oil in a pressure cooker
Saute onions and green chilies
Grind chili powder, coriander powder, turmeric powder, meat masala, ginger, garlic, pepper corns and salt into masala paste
Add this into the sauteed ingredients
Saute until the mixture turns aromatic
Add the beef
Close the lid and cook
Meanwhile, saute the tender coconut in some hot oil
Open the lid of the pressure cooker
Add the sauteed tender coconut
Give everything a good mix
Pour the batter in hot appam vessel
Do not revolve the vessel
Place the filling in the middle
Place the lid on and cook
