Here is a superb recipe of delicious Kerala style crab roast that could be enjoyed with rice, chapathi, appam or porotta.
Ingredients
1 kg crab
3 onions
2 big tomatoes
12 shallots
1 piece ginger
2 garlic cloves
1 tsp fennel seeds
1 tsp fenugreek
4 dried chillies
2 tbsp coconut oil
3 green chillies
Salt as required
Curry leaves
½ tsp turmeric powder
1 tbsp Kashmiri chilli powder
1 tsp pepper powder
Preparation
Grind shallots, ginger, garlic, dried chillies, fennel and fenugreek into a paste
Heat coconut oil in a pan
Sauté the onions
When the onions begin to change colour, add the masala paste
Sauté well
Add green chillies and tomatoes
Add curry leaves, turmeric powder, chilli powder, pepper powder and salt
Sauté until the raw smell of the powders is gone
Into add cleaned crab pieces
Pour 1 ½ glasses hot water too
Close the lid and cook for 12 minutes
Sprinkle some fresh coconut oil before turning off the flame
Mouth watering crab roast is ready!
