Ingredients
1 cup mung beans
1 ½ cups water
Salt as required
½ tsp turmeric powder
2 tbsp coconut oil
1 big onion
4 garlic cloves
3 dried chillies
¼ cup coconut shards
2 sprigs curry leaves
Preparation
Wash the mung beans
Pressure cook them in 1 ½ cups water with salt and turmeric powder until four whistles (one whistle is enough if the mung beans are soaked)
Crush the dried chillies, onion and garlic in a mixer jar
Heat coconut oil in a thick bottomed pan
Fry the coconut shards and curry leaves
Add the crushed aromatics when the coconut shards turn brown in colour
Sauté until the oil separates
Add turmeric powder and sauté
Now add the cooked mung beans
Mix well
Delicious mung beans ularthu is ready.
