Ingredients
1 cup semolina
3 tomatoes (finely chopped)
1 onion (finely chopped)
2 green chillies (finely chopped)
1 tsp ginger
6 cashews
1 tbsp peanuts
1 tsp yellow dal
1 tsp urad dal
A pinch of asafoetida
½ tsp mustard seeds
2 dried chillies
¼ tsp turmeric powder
¼ tsp chilli powder
1 tbsp coriander leaves (finely chopped)
Salt as required
2 tbsp oil
1 tsp ghee
2 ½ cups water

Preparation
Heat a pan and dry roast the semolina
Set it aside to be used later
Heat 2 tbsp oil
Fry the cashews and peanuts separately
Set them aside as well
Now splutter the mustard seeds, yellow dal and urad dal
Roast asafoetida and dry chillies
Sauté onion, green chillies, ginger and curry leaves
Add tomatoes
Add turmeric powder, chilli powder and salt
Cook until the tomatoes are soft
Pour 2 ½ cups water
Allow it to boil nicely
Lower the flame and add the semolina slowly
Keep stirring so that lumps are not formed
Close the lid and cook for 3 -4 minutes
Add ghee
Garnish with fried cashews, peanuts and coriander leaves
Tomato upma tastes best when served hot.
