Plantains are a versatile ingredient that is abundantly available in our backyards. Here is a pretty simple yet delicious recipe of plantain fry that could be enjoyed with rice or chapathi.
Ingredients
2 raw plantains
2 tsp urad dal
1 ½ tsp fennel seeds
2 tsp coriander seeds
5 dried chillies
Gooseberry sized ball of tamarind
4 tbsp grated coconut
1 tsp jaggery
Salt as required
¼ tsp cumin seeds
1 tsp mustard seeds
Curry leaves as required
¼ tsp asafoetida powder
1 onion
1 tbsp coconut oil
Preparation
Pressure cook the plantains in a pressure cooker with ½ cup water until one whistle
After the plantains have cooled down, mash them gently with a fork
Dry roast fennel, coriander seeds, dried chillies, urad dal and chillies in a hot pan
When they are almost done, add the grated coconut
Roast until the coconut turns brown in colour
Into it add the tamarind and jaggery too
Mix well
Grind this mixture into fine powder after it cools down
Meanwhile, heat coconut oil in another pan
Roast cumin seeds
Into it add curry leaves and onions
Sauté well
Now add the mashed plantains
Add salt as required
Add the powdered masala mix too
Give everything a good mix
Plantain fry tastes best when served hot.
