Ingredients
2 big potatoes (boiled)
2 cups wheat flour
2 tbsp semolina
1 tsp cumin seeds
1 tsp ajwain or carom seeds
¼ tsp turmeric powder
1 tbsp coriander leaves
Salt as required
Water as required
Oil to fry

Preparation
Pressure cook the potatoes until four whistles
Grate the cooked potatoes
Into it add the wheat flour, semolina, cumin seeds, ajwain, turmeric powder, chilli powder, chopped coriander leaves and salt
Pour enough water too
Now, knead into tight dough
Make lemon sized balls from the dough and roll into thick sheets
Adjust the sides and shape them into puri
Fry the puri in hot oil
Squeeze all the sides well into the oil using a spatula
The puri would then rise up nicely
Cook the puri on both sides until golden in colour
Enjoy hot aloo puri as it is or with spicy curries.
