Ingredients
1cup milk powder
¼ cup all purpose flour
½ tsp baking powder
3 tbsp ghee
¼ cup + 3 tbsp milk
1 cup sugar
2 cups water
Juice of half lemon
½ tsp rose water
1 tsp cardamom powder
¼ tsp saffron
Oil/ghee to fry
Preparation
Take the milk powder, all purpose flour, baking powder and ghee in a bowl
Mix well using your fingers
Pour milk and mix into stiff dough
Close the lid and keep aside for 15 minutes
Prepare the sugar syrup by boiling sugar, water, lemon juice, rose water, cardamom powder and saffron in a thick bottomed vessel
Boil the syrup for at least 7 minutes
When the syrup boils rapidly, turn off the flame and close the lid
Make sure that the syrup stays hot
Make 20 small balls from the dough
If the dough is too stiff, add some milk to soften it
Heat an unniyappam pan and add enough ghee into the holes
Lower the flame when the ghee is hot
Add the jamun balls into each hole
Fry until the jamun balls are brown on all sides
Transfer the fried jamun into the sugar syrup while they are hot
Stir the syrup gently without breaking the jamun
Close the lid and keep aside for 15 minutes
Soft and plump gulam jamuns are ready!
