Japanese omurice is a fusion dish that is delicious and filling too. A portmanteau word, like brunch, omurice has the goodness of omelet and rice. Even though it is a Japanese dish, omurice is a staple in many Asian countries like Korea and Taiwan. The rice that is cooked with chicken bits and veggies is wrapped in a soft blanket of fluffy omelet. You could enjoy this dish wish a few dollops of tomato ketchup on the side. Some people add noodles instead of rice. Interestingly, the omelet or the rice could be made rich and heavy by adding different ingredients as per your taste. Sausages, minced meat, shredded chicken or beef too could be added in the rice. Besides, the rice could be loaded with veggies like mushrooms, soy beans and cauliflower. Ingredients
3 tbsp butter/refined oil
1 tbsp finely chopped garlic
1 big onion
3 green chillies
1 cup veggies (carrots, beans, cauliflower, bell pepper, mushroom, soy beans)
2 tbsp tomato ketchup
Oyster sauce, chilli sauce, soy sauce (optional)
2 cups basmati rice (cooked and kept in the fridge overnight)
3 eggs
1 cup shredded chicken
Salt as required
Pepper as required
Preparation
Heat butter or oil in a pan
Sauté finely chopped garlic, onion and green chillies
In case sausages are used, add them right after garlic
Add the vegetables after this mixture has been sautéed well
Sauté for a while
Now add the shredded chicken
Add some pepper powder too
Add the cooked rice and salt as required
Into it add the tomato ketchup
Mix well
Transfer the rice into another bowl
Press the rice nicely
Now flip the bowl into a plate
Prepare the omelet as you like
Place the omelet on top of the rice
