Ingredients
1 ½ cup jaggery
½ cup water
1 pineapple
2 cup raw rice
1 cup aval (rice flakes)
¼ teaspoon soda powder
Salt as required

Preparation
Powder the jaggery
Add half a cup of water, keep over a low flame and allow it to melt. Chop a medium-sized pineapple into small pieces
Soak the raw rice for at least four hours
See that the rice is low on starch and of fine quality. Once the rice is well soaked, wash it thoroughly and set aside
Now soak the aval (rice flakes) for a few minutes. The rice flakes can be either from white or bran-rich brown rice
Mixie-grind the chopped pineapple along with the soaked rice, aval and liquid jaggery into a fine paste
Add in the salt and the soda powder
Ensure that no excess soda powder gets to be added. Mix well
The dosa batter is ready. As this is an instant dosa, it can be made at once
The dosa can be seasoned with ghee and rolled into a pineapple ghee roast.
