Pomfret is a fleshy fish that tastes fabulous if marinated with flavoursome ingredients and fried to perfection. Here is a very simple recipe for pomfret fry. 

Ingredients
3 pomfrets
1 cup coriander leaves (finely chopped)
5 -6 garlic cloves
2 -3 green chillies (split)
½ cup lemon juice
Oil to fry
Lemon wedges, onion rings and split green chillies to garnish Preparation
Cut and wash the fishes; remove the tails
Score the fishes so that flesh absorbs the marinade well
Grind the coriander leaves, garlic, green chillies and lemon juice into a smooth marinade paste
Rub the marinade on the fish fillets
Keep them aside for at least half an hour
Heat oil in a pan and add the marinated fishes
Fry the fishes by flipping them until both sides are nicely cooked
Take out the fried fishes and place them on kitchen towels
Garnish with lemon wedges, onion rings and split green chillies
Fried pomfret tastes best when served hot.
