Ingredients
400 gms cauliflower
1 medium-sized tomato (chopped)
2 medium-sized onions (chopped)
2 green chillies
2 tbsp crushed ginger-garlic
½ cup cornflour
¼ cup rice flour
1 tsp ginger-garlic paste
1 tbsp soy sauce
1 tbsp tomato ketchup
1 tbsp Kashmiri chilli powder
1 tsp regular chilli powder
¼ tsp pepper powder
½ tsp turmeric powder
1 tbsp coriander powder
1 tsp garam masala
1 tsp fennel powder
Coconut oil
Salt as required
Curry leaves as required
Water as required
Preparation
Separate the cauliflower into small florets
Boil 3 cups water and add a tsp of salt
When the water boils rapidly, add the florets and boil
After 2 minutes, strain and set it aside
Take corn flour, rice flour, ginger-garlic paste, Kashmiri chilli powder, soy sauce, tomato ketchup and salt
Mix well using a spoon
Pour half cup water slowly and mix into the batter that is not too thick or loose
Add the boiled cauliflower florets into this batter
Coat the florets well
Heat a pan on medium flame and pour coconut oil
Add the batter coated florets
Fry the cauliflower until they are golden brown
Meanwhile, heat ¼ cup coconut oil in another pan
Roast some curry leaves
Now add the split green chillies, onions, crushed ginger – garlic and half tsp salt
Cook for at least 10 minutes by stirring occasionally
After 10 minutes, lower the flame
Add the regular chilli powder, pepper powder, coriander powder, garam masala and fennel powder
Sauté well
Into it add the chopped tomatoes
Sauté for 3 minutes or until the tomatoes are softened
Into it add the fried cauliflower florets
Mix well and turn off the flame
Enjoy the fried cauliflower masala.
