Ingredients
For tart
250 gms flour
100 gms butter
1 beaten egg
1 tsp salt
1 tbsp sugar powder
1 tsp baking powder
For lemon curd
¾ cup lemon juice
1 tbsp lemon zest
3 egg yolks
½ cup unsalted butter
For Meringue
3 egg whites
½ cup powdered sugar
1 tsp lemon juice

Preparation
Mix flour, butter, salt, powdered sugar and baking powder
Butter should be cold
Mix it with hand so that it resembles bread crumbs
Then add one beaten egg and cold water as needed to make a soft dough
Do not over knead
Roll it and cut it into small circles using a cookie cutter and press it to mini tart trays
Make holes using a fork so that it doesn't puff up and bake it in a preheated oven at 180 degree for 15 to 20 mins
For lemon curd
Cook it over low heat in a sauce pan.Keep stirring.
Once it's thick switch off the flame. Let it cool down
For Meringue
Beat egg whites in a clean bowl without any water content till it's thick
Then add powdered sugar and then lime juice
To assemble
Fill lemon curd in tarts once it cools down and pipe meringue on top and use broil option (or only upper cool on) in oven and broil the tarts for less than a minute till you see the meringue turns light brown at the peaks and your delicious lemon meringue tarts are ready.
