Ingredients
For the milk layer
3 tbsp butter
¼ cup + 1tbsp all-purpose flour
4 tbsp sugar
2 cups milk
1 tsp vanilla essence
For the caramel layer
½ cup sugar
1 cup water
1 tbsp cornflour
Preparation
Mix the cornflour in 1 cup water
Heat a frying pan
Add the sugar and 2 cups water
When the sugar begins to turn colour, stir well
Add the corn slurry when the sugar is nicely caramelized and dark brown in colour
Mix and stir for 5 minutes on medium flame
Turn off the flame and set it aside
For the milk layer, melt butter in a pan
Add the all-purpose flour and mix
When the raw smell of the all-purpose flour is gone, pour in the milk
Stir well
Into it add the vanilla essence
Keep stirring until the milk thickens up
Turn off the flame and transfer it into a serving or setting bowl
Pour the previously prepared caramel layer on top of the milk layer
Keep the pudding in the fridge after it cools down
Milk pudding tastes good when it is chilled for at least 4 hours.
