Tasty and soft idlis could be prepared using gram flour. Unlike the regular idli batter, this one doesn’t need to be kept aside for hours to rise. Ingredients
1 cup gram flour
2 tbsp semolina
Salt as required
1 ½ tsp sugar
¼ tsp turmeric powder
1 piece gingerv 1 green chilli
1//4 cup yoghurt
¾ cup water
1 tsp eno salt
1 tsp refined oil
1 tbsp ghee
1 tsp mustard seeds
½ tsp cumin
2 tsp white sesame seeds
¼ tsp asafetida powder
2 sprigs curry leaves
4 green chillies
½ tsp salt
1 tsp sugar
½ cup water
1 tbsp coriander leaves (to garnish)
2 tbsp grated coconut (to garnish)
Preparation
Grind the gram flour, ginger, green chillies, salt, sugar and turmeric powder in a mixer jar
Into it add semolina, yoghurt and water
Blend again (the batter should have smooth consistency)
Keep the batter aside for at least 20 minutes
Into the batter add 1 tsp refined oil and Eno salt
Mix well (the batter would instantly rise)
Pour the batter in greased idli vessel
Steam the idlis
Transfer the idlis into a dish
Meanwhile heat ghee in a thick bottomed pan
Splutter mustard seeds, cumin and white sesame seeds
Into it add asafetida powder, curry leaves and green chillies
Sauté for some time
Now pour half glass water and sugar and salt
Allow the tempering to boil rapidly
Pour this tempering over the idlis
Garnish with chopped coriander leaves and grated coconut
Enjoy the super soft and delicious gram flour idli.
