Ingredients
3 bitter gourds
6 garlic cloves
1 small piece of ginger (chopped)
4 green chillies
Curry leaves as required
Asafoetida as required
2 ½ tbsp chilli powder
¼ tsp turmeric powder
¼ tsp fenugreek
Lemon sized ball of Malabar tamarind (soaked in water)
½ tsp sugar
Preparation
Add ½ tsp salt into the bitter gourd pieces
Mix well and set aside for 15 minutes
Squeeze the bitter gourd pieces to remove the water; this takes away the bitterness
Fry these bitter gourd pieces in hot oil
Meanwhile, heat oil in another pan and splutter mustard seeds
Sauté the ginger, garlic and green chillies
Add the curry leaves too
Into it add chilli powder, turmeric powder, fenugreek powder and asafoetida
Sauté until the raw smell of the powders are gone
Now add the fried bitter gourd pieces
Pour in the tamarind water
When the gravy boils rapidly and has reduced a bit, add salt and sugar
Store in glass containers after the bitter gourd pickle has cooled down completely.
