Zippy beetroot wine for New Year

All you need is three beetroots and some ingredients you have at home. Three days later, get set to sip bright, colourful wine for this New Year!

Ingredients:
3 beetroots (50 gm)
2 cups sugar
4 pieces cinnamon
6 cloves
4 pods cardamom
2 dry red chillies
A handful of wheat grain
1 tablespoon lemon extract
1 teaspoon yeast
1½ litres water
Preparation:
Wash the beetroots well. Peel and chop into small pieces
In a pressure cooker, add chopped beetroots, 2 pieces of cinnamon, 4 cloves, 4 pods of cardamom, 2 dry red chillies (with sides slit), wheat grain and one and a half litres of water
Cook for up to a whistle
Wait till the cooker is ready to be opened
Set the wine mix aside till it cools down completely
Once the pressure cooker contents turn cool, strain out the liquid into another dish
Into this liquid, add two cups of sugar
Now blend in the lemon extract, yeast, 2 pieces of cinnamon and 2 cloves
Pour the mix into a wine jar and secure the lid tightly with a piece of light white cloth
Note that the piece of material should be light enough to allow free flow of air
Set the jar aside in a cool dark place for three days, after which the wine can be strained out once more
For greater fizz, the wine can be set aside for 7, 14 or 21 days
See that the ladle or long-handled spoon with which you mix the wine occasionally is clean and dry
Say cheers! Your New Year wine is ready in three days!
