Rambha rice is extremely delicious and stands out for its amazing aroma. This rice dish could be enjoyed on its own even without a curry on the side. Check out the recipe of Rambha rice.

Ingredients
2 cups basmati rice
2 ½ cups water
½ cup cow’s milk
3 small pieces of cinnamon
5 cardamom pods
5 cloves
Salt as required
Palm full of Rambha leaf/ biryani leaf/ pandan leaf (you could add bay leaves instead of Rambha leaves)
2 ½ tsp sugar
5 tbsp garlic (finely chopped)
3 tbsp onion (finely chopped)
4 tbsp butter
5 cashews
A pinch of cardamom powder
2 pinches garam masala/ biryani masala
2 tbsp sunflower oil
½ cup carrot (cut into small pieces)
¼ cup frozen peas
½ cup beans (cut into small pieces)
A small portion of cauliflower (separated into florets)

Preparation
Wash the basmati rice and soak for 30 minutes
Cook all the veggies in boiling water with some salt for 4 minutes
First, add the carrot and beans; after 3 minutes add the frozen peas and cauliflower
In case you are using fresh peas, soak for 8 hours and cook them
Drain the veggies after 4 minutes and spread them in a tray
Heat 1 tbsp butter and 1 tbsp oil in a pressure cooker
Roast the cinnamon, cardamom and cloves
Add 3 tbsp garlic and sauté
Add 2 tbsp onions when the garlic changes colour
Add 2 tsp sugar and sauté until the onion turns brown
Add 5 cashews, milk and water
When this mixture begins to boil, add the biryani masala, cardamom powder, half Rambha leaf and salt as required
Boil well
Add the basmati rice into the boiling mixture
Mix well
Close the lid of the pressure cooker and cook until one whistle on high flame
Open the pressure cooker only after the steam has been released completely
Mix the rice using a fork to separate the grains
Transfer the cooked rice into the flat vessel or tray
Heat the remaining butter in a pan
Add one small Rambha leaf, 2 tbsp garlic and 1 tbsp onion
Sauté well
Add the veggies when the ingredients are sautéed well
Add ¼ tsp sugar and salt as required
Stir and mix on high flame for at least 2 minutes
Into it add the cooked rice
Add some turmeric powder and mix well
Turn off the flame and keep aside with the lid on
Open the lid and serve the Rambha rice only after 30 minutes
Rambha rice could be enjoyed with chicken roast, paneer masala or beef roast

Note: You could add ghee or oil instead of butter. Make sure that you add sugar to balance out the flavours. In case you don’t have biryani masala in the pantry, add some garam masala. Cow’s milk could be replaced with fresh coconut milk. Rambha rice could also be prepared without pressure cooking it.
