Ingredients
1 cup raw rice
2 tender coconuts
1 cup tender coconut water
1 tbsp rice flour
¼ cup water
2 tbsp sugar
¼ tsp yeast
Salt as required

Preparation
Wash the raw rice and soak for at least 2 hours; you could also use kaima rice or basmati rice
Mix 1 tbsp rice flour in half cup water
Boil until it thicken up
You could also use 2 tbsp boiled rice instead of thickened rice flour
Add the soaked raw rice, thickened rice flour, tender coconut water, tender coconut flesh, sugar, yeast and salt in a mixer jar
Blend well
Keep the batter aside for at least 8 - 10 hours for it to rise
Heat a tawa and pour a ladle full of batter
Close the lid and cook for a minutes
Soft and delicious karikku appam is ready.
