Ghee rice is extremely delicious and fragrant and can be enjoyed with both vegetarian and non-vegetarian side dishes. Check out this easy recipe of ghee rice.
Ingredients
2 cups basmati rice
3 tbsp ghee
1 ½ onion
1 carrot
1 tbsp coconut oil
Cashews
Raisins
Cinnamon stick
Cloves
Cardamom pods
1 tsp lemon juice
Preparation
Heat 1 tbsp ghee and 1 tbsp coconut oil in a pan
Fry the cashews and raisins
Keep them aside to be used later
Fry 1 finely sliced onion in the same pan
Fry the finely chopped carrots as well
Heat 2 tbsp ghee in a pressure cooker
Roast cinnamon, cloves and cardamom
Sauté the remaining onions as well
Into it add the basmati rice that has been soaked for at least half an hour
Mix and stir for 2 minutes until the rice is fragrant
Now add 3 ½ cups hot water, lemon juice and salt as required
Mix well
Pressure cook on low flame until one whistle
Open the pressure cooker and add the fried cashews, raisins, onions and carrots
Mix well
Cook for another 2 minutes on low flame with the lid on
Ghee rice tastes best when served hot with delicious curries.
