The classic chutney is an inseparable part of the Indian cuisine. There are chutneys in myriad flavours made using a variety of ingredients. Here is an interesting recipe of ivy gourd chutney that tastes amazing with not just boiled rice but with dosa, idli and chapathi as well.
Ingredients
10 ivy gourd
7 dried chillies
7 shallots
2 tsp urad dal
2 tsp Bengal gram
1 tsp mustard seeds
Curry leaves as required
Gooseberry sized ball of tamarind
Coconut oil as required
Salt as required
¼ tsp turmeric powder
2 tbsp grated coconut
1 tbsp water
Preparation
Heat 1 tsp coconut oil in a pan
Roast the dried chillies, shallots, 1 tsp Bengal gram, 1 tsp urad dal and some curry leaves
Keep these aside to be used later
Now sauté the ivy gourd slices in the same pan
Add the tamarind and sauté
Transfer the sautéed ivy gourd and the roasted mixture into a mixer jar
Into it add salt, turmeric powder, grated coconut and some water as well
Grind well
Heat coconut oil and splutter mustard seeds and 1 tsp urad dal
Roast 1 tsp Bengal gram and curry leaves
Add the ground chutney into this tempering
Mix well.
