Motichoor laddu

Motichoor laddus are extremely sweet and moist and are often exchanged during festivals in India. Here is the recipe.

Ingredients
1 cup gram flour (250 ml cup)
1 cup sugar
2 cardamom pods
½ tbsp ghee
1 drop food color (optional)
Oil to fry
Cashews

Preparation
Add the food color into the gram flour
Add water gradually and mix well so that lumps are not formed
Heat oil and hold a perforated ladle in the middle
Pour some batter on the ladle
Move the ladle around so that the batter doesn't fall at the same place and form a big lump
Fry for at least a minute; however these shouldn€™t be too crispy
Fry the rest of the batter
Into a vessel add sugar, ¾ cup water and cardamom
Boil on low flame
When the sugar syrup is sticky and thick, add the fried boondi (gram flour pearls) into it
Add the ghee as well
Mix well
Keep stirring until the boondi pearls absorb the sugar syrup completely
Make them into laddus when these sugary pearls are warm
Place a cashew on each laddu and roll again
Enjoy the motichoor laddu.
