Ingredients
1 cup wheat flour
Salt as required
2 tbsp oil
4 garlic cloves (finely chopped)
4 onions (finely chopped)
1 tsp cumin
½ tsp ajwain (carrom seeds)
1 small piece ginger (finely chopped)
2 green chillies (finely chopped)
½ tsp chilli powder
¼ cup gram flour
¼ tsp turmeric powder
½ tsp coriander powder
¼ tsp asafetida
1 tbsp kasuri methi or dried fenugreek leaves
1 tsp lemon juice

Preparation
Mix the wheat flour with water as required and knead into soft dough
Keep it aside
Heat oil in a pan
Sauté garlic, cumin and ajwain
Now add ginger and green chillies
Sauté well
Into it add chilli powder, turmeric powder, coriander powder and asafetida
Sauté until the raw smell of the powders are gone
Add the gram flour and mix well
Add the onions and sauté
Taste for seasoning
Finally add the lemon juice and kasuri methi
Give everything a good mix. This is the filling for the paratha
Meanwhile, add some oil into the dough and knead again
Make medium sized balls from it
Roll them into slightly thick flat breads
Place some filling in the centre of the paratha
Make it into a ball again
Now roll them into paratha
Rub oil on a hot pan or tawa
Cook the paratha by flipping.
