Ingredients
10 jackfruit bulbs
1 cup raw rice (soaked)
1 cup jaggery syrup
1 cup grated coconut
½ cup boiled rice
1 tsp cumin
4 cardamom pods
1 tsp instant yeast
½ cup thinly-chopped jackfruit
1 cup water
Preparation
Grind the raw rice and jackfruit bulbs with jaggery syrup, coconut, boiled rice, cumin, cardamom, yeast and some water
Keep this batter aside for at least 5 hours for it to rise
Add sugar after the batter has risen
Pour the batter into a greased steamer tin
Garnish with chopped jackfruit
Cook in steam for 10-20 minutes
Cut into pieces after the vattayappam has cooled down.
