Kovakka or ivy gourd-egg burji is extremely delicious and can be easily prepared. Here is the recipe.
Ingredients
1 ivy gourd (chopped)
1 egg
1 cup grated coconut
1 small piece ginger
5 cloves garlic
½ tsp turmeric powder
½ tsp pepper powder
6 shallots (chopped)
5 green chillies
Preparation
Heat oil in a pan and splutter mustard seeds
Sauté shallots and green chillies
Add chopped ivy gourd and salt
Mix well and cook with the lid on
Crush the grated coconut with cumin
Add this into the ivy gourd stir fry
Mix well
Make some space in the pan and break the egg into it
Add salt, pepper powder and turmeric powder
Stir and mix well.
