Kappa pappadam or tapioca crispies is a delicious snack that can be cooked easily with very little oil. Wafer-thin kappa papadam tastes amazing with a glass of piping hot black tea. Here is how you could make the tapioca crispies.
Ingredients
2 tapiocas
2 tsp chilli powder
½ tsp turmeric powder
½ tsp asafetida
1 tsp pepper powder
2 tsp salt
1 tsp cumin
2 tbsp sesame seeds
Preparation
Wash the tapiocas and cut them into small pieces
Grind the tapioca pieces along with cumin in a mixer jar
The consistency should match dosa batter
Into the tapioca paste add chilli powder, turmeric powder, asafetida, pepper powder and salt as well
Mix well
Boil 6 glasses water in a thick bottomed vessel
When the water boils rapidly add in the spiced tapioca batter
Stir continuously until the mixture thickens up
Now add the sesame seeds and mix well
On a plastic sheet, place a dollop of thick tapioca mix
Spread into wafer thin pappadam using the backside of a spoon
Keep it under the sun for at least two days
After two days, fry in hot oil
Enjoy the crispy kappa pappadam.
