Besides being a delicious side dish for rice, rasam is known as a healthy soup prepared using spices and aromatics that can aid digestion. Here is how you could prepare the special garlic rasam that is excellent for digestion.
Ingredients
1 tsp black pepper corns
1 tsp cumin
10 cloves garlic
3 dried chilies
1 tomato
Lemon sized ball of tamarind
½ tsp turmeric powder
A pinch of asafetida
Mustard seeds
Curry leaves
Coriander leaves
Oil
Salt as required
Preparation
Grind the pepper corns, cumin, 3 cloves garlic and dried chili
Crush 7 garlic cloves with or without the peel
Heat oil in a pan and splutter the mustard seeds
Add curry leaves, 1 dried chili and the crushed garlic
Sauté until the garlic turns brown in color
Now add the tomato, turmeric powder and asafetida as well
Sauté until the tomatoes are nice and soft
Add the previously powdered rasam masala
Sauté for 2 minutes on low flame
Add the tamarind water and 1.5 to 2 cups water as well
Add salt as required
Boil the rasam for 5-6 minutes on medium flame
Turn off the flame and garnish with chopped coriander leaves.
