Chicken dishes have become an unavoidable part of the festival feasts in the Malayalai households. Grilled chicken would add oodles of flavour to the delicious New Year feasts. Here is how you could easily make grilled chicken at home.

Ingredients
2 cups yoghurt
2 tbsp olive oil
1 tbsp lemon juice
Salt as required
1 tbsp chilli powder
½-¾ tsp crushed pepper corns
¾ tsp coriander powder
½-¾ tsp cumin powder
A pinch of cinnamon powder
1 tbsp lemon juice
Salt
4 chicken breasts
2 tbsp shallots (chopped)
½ cup min leaves (chopped)
½ cup coriander leaves (chopped)
1 tbsp olive oil

Preparation
Mix the olive oil, lemon juice, salt, chilli powder, pepper, coriander powder, cumin powder and cinnamon powder into 1 cup yoghurt
Marinate the chicken breasts with this special marinade
Keep them aside for at least half an hour
Pre-heat the oven to 220 degree C
Prepare the yoghurt sauce by mixing lemon juice and salt in the rest of the yoghurt
Lower the temperature of the oven to 1800 degree Celsius
Remove the excess marinade from the chicken breasts
Rub some olive oil on the marinated chicken breasts or grease the grill rack
Cover the chicken with aluminium foil before grilling it
Cook the chicken breasts for at least 12-15 minutes. Flip them so that the chicken is evenly cooked
Take out the chicken breasts and remove the aluminium foil wrap
Grill them again for some more time
Into a bowl add shallots, mint leaves, coriander leaves and olive oil
Shake the bowl to mix them well. This is the mint salad
Spread some yoghurt sauce on top of the grilled chicken breasts and garnish with mint salad.
