Inji curry that has the goodness of ginger is one of the unique dishes in Kerala cuisine. Try out this special ginger curry, spiced with buttermilk that can be made in just 5 minutes.
Ingredients
1 cup coconut
1 tbsp ginger
¼ tbsp cumin
½ litre buttermilk
3 tsp coconut oil
Mustard seeds
Dried chillies
Curry leaves
2 pinches asafetida powder
Preparation
Grind the grated coconut, cumin and ginger into smooth paste
Add this paste into the buttermilk and mix well
Heat coconut oil in earthen vessel and splutter mustard seeds
Roast the dried chillies and curry leaves
Add the asafetida powder as well
Pour the buttermilk-coconut mixture into this tempering
Taste for seasoning
Take it off the flame when the dish begins to heat up.
