Brinjal is almost everyone's favourite. Here is an evening snack you can whip up easily for you children when they come from school. Here's the recipe of a crispy brinjal bites.
Ingredients
1/2 cup flaxseed crumbs (flaxseed roasted and crushed in blender)
2 tbsp almond powder
1 tbsp tomato paste
2 tspn garlic powder
2 tspn onion powder
2 tspn Italian herbs/any herbs
Half-slitted brinjal 4 to 5nos
3 tbsp barbecue sauce
Any vegetable oil 1/2 cup
Preparation
Combine the flaxseeds crumbs, almond flour, tomato paste, garlic powder, onion powder, Italian herbs and
cup of water in a blender until the batter is smooth and thick
Transfer to a bowl and add the Brinjals pieces; toss until them are well coated with the batter
Heat oil in a pan in medium flame and put Brinjal pieces
Fry until golden brown and crispy and remove from flame serve hot.
