Ingredients
Oil as required
¼ tsp mustard seeds
4 -5 potatoes (peeled and cubed)
3 -4 tomatoes (diced)
1 green chilli
1 inch piece of ginger
½ tsp turmeric powder
Chilli powder as required
Salt as required
Sugar as required
Small bunch of coriander leaves (finely chopped)
Preparation
Heat oil in a pan and splutter the mustard seeds
Fry the potato cubes in this
When the potatoes turn light golden in colour, pour some water and allow it to boil
Add the tomatoes, ginger and green chilli paste as well. Mix well
Into it add turmeric powder, chilli powder, sugar and salt
Give everything a good mix and cook on simmer until the tomatoes are well cooked and mushy
Garnish with chopped coriander leaves.
