Eggs are a rich and cheap source of protein. For those who are bored of eating regular omelets, boiled eggs or the bull's eye, here are the recipes of four delicious dishes that can be easily prepared using eggs. Egg idli/idimutta
Ingredients:
4 eggs
½ tsp chilli powder
¼ tsp turmeric powder
¼ tsp coriander powder
¼ tsp black pepper powder
1 ½ tbsp bread crumbs
2 tbsp coconut oil
Salt as required
Preparation:
Crack open one egg each in the holes of the idli vessel and cook in steam
Mix the chilli powder, turmeric powder, coriander powder, black pepper powder, bread crumbs, salt and some water in a bowl
Spread this mixture on the cooked eggs and fry in hot oil.
Bread omelet pizza
Ingredients:
4 eggs
½ tbsp pizza seasoning
2 tbsp pizza sauce
2 tbsp grated mozzarella cheese
¼ capsicum (green, red and yellow)
¼ onion
¼ tomato
2 olives
3 bread slices
½ tbsp butter
Salt as required
Preparation:
Beat the eggs along with the pizza seasoning and salt in a bowl
Heat butter in a pan and pour half of the beaten egg mixture
Dip the bread slices in the beaten eggs and place it over the omelet
Pour the rest of the beaten egg mixture over it and allow the omelet to cook on both the sides
Spread the pizza sauce on one side
Place some grated mozzarella cheese and chopped capsicums, onion, tomato and olives as well
Cover the dish with a lid for the cheese to melt
Serve hot with tomato ketchup.
Vegetable egg unniyappam
Ingredients:
2 eggs
2 tbsp cabbage
2 tbsp cauliflower
1 tbsp capsicum (red, green, and yellow)
¼ tbsp ginger
1 onion
2 green chillies
3 beans
1 ½ tbsp coconut oil
2 tbsp carrot
¼ tbsp pepper powder
1 tbsp milk
Salt as required
Preparation:
Heat coconut oil in a pan and sauté onion, green chillies, ginger, cabbage, cauliflower, capsicums and carrot
Add the sautéed vegetables into a bowl with beaten eggs and mix well
Grease the holes of the unniyappam vessel and pour spoons full of vegetable – egg mixture into it
Cook until all sides of the unniyappam are crispy and golden
Tastes best when served hot.
Mini potato omelet
Ingredients:
100 gm potato
3 eggs
1 onion
2 green chillies
1 tbsp coriander leaves
1 tbsp curry leaves
¾ tbsp semolina
Salt as required
Preparation:
Cook the potatoes and mash well
Mix in the onions, egg, coriander leaves, curry leaves, green chillies, and semolina
Beat the eggs with some salt
Make small balls from the potato mixture
Dip these balls in the beaten eggs and shallow fry in hot coconut oil
Serve hot with coriander chutney or tomato ketchup.
