It is common to make steaming hot puttu with rice, wheat, semolina and even finger millet. However, not many know that delicious and super soft puttu can be made with all purpose flour as well. Culinary expert Lakshmi Nair, in the latest episode of her vlog, shows how to make three different varieties of easy and incredibly delicious puttu. Check out the recipes of special rice puttu, all purpose flour puttu and soft wheat puttu.
1. Rice puttu
Ingredients
1 cup roasted rice flour
Salt as required
½ cup water + 2 tbsp
Grated coconut
Preparation
Mix the rice flour into the right consistency of the puttu mix by gradually adding half cup water.
Ignore the lumps as you can break it up in the smaller jar of the mixer.
Add 1 – 2 table spoons of water if needed and salt as well. Mix everything well.
Pulse this puttu mixture in the mixer and if it is too wet, adjust the consistency by adding more spoons of rice flour.
Heat water in a puttu vessel. Add some grated coconut into the cylindrical puttu kutty and then fill in the puttu mixture till halfway through. Repeat the layers with coconut on the top.
Place the puttu kutty over the puttu kudam and cook for three minutes or till you see steam releasing from the top vents of the puttu kutty.
Unmould the puttu by pressing through the mould using a wooden spoon.
2. Wheat puttu
Ingredients
2 cups wheat flour
Salt as required
1 cup hot water
1 tsp sugar (optional)
Preparation
Add salt as required in the wheat flour. Pour hot water (boiled by adding sugar) into it and mix using a wooden spoon.
The puttu mixture would now be too watery and sticky. However, allow this mixture to cool down.
Save 6 tea spoons of regular wheat flour.
Add the cooled puttu mixture into the small jar of the mixer and 1 ½ tea spoons of regular wheat flour as well. Give it a pulse and everything would be mixed into the right consistency.
Repeat until the entire puttu mixture is nice and soft, without any lumps.
Fill the puttu kutty with grated coconut and the puttu mixture.
Cook the puttu until steam comes through the vents.
3. All purpose flour puttu
Ingredients
2 cups all purpose flour
Salt as required
1 cup hot water (boiled by adding salt and sugar)
Grated coconut
Preparation
While boiling the water, add the salt first and then the sugar only when it begins to boil.
Add the hot water into the all purpose flour and mix.
Allow this mixture to cool down.
Now add this mixture in the small jar of the mixer along with 6 -7 table spoons of regular all purpose flour. Mix them into fine powder.
Fill the puttu kutty with grated coconut and puttu mixture.
Steam this over boiling water.
