Ingredients
50 gms rice flour
50 gms millet powder/ragi powder
Egg white
30 gms amaranth spinach
30 gms yellow lentils
4 shallots
2 green chillies
5 gms coriander leaves
5 gms oil
Salt as required
1 cup water
Preparation
Mix the rice flour and the millet powder well. Add the egg white and mix well.
Add half cup water and mix. Boil the remaining half cup and add that too.
Mix everything well into the right consistency of the dosa batter.
Heat a pan and pour spoons full of this batter to make dosa.
For the filling
Cook the finely chopped spinach in steam.
Crush the yellow lentils along with shallots and green chillies.
Mix the steamed spinach with the lentil mixture.
Spread this filling on the dosa and fold it.
Serve hot with coconut chutney.
