Ingredients
For qamar al din:
1 cup water
½ cup sugar
10 apricots
For nargisi kebab:
350 gm boneless chicken
2 boiled potatoes
1 tbsp salt
¼ tsp ginger-garlic paste
2 green chillies
½ tsp coriander powder
1 tsp chilli powder
¼ tsp garam masala
1 tsp pepper powder
Crumbled bread slices as required
3 eggs
Coriander leaves as required
2 tbsp oil
Oil to fry
1 tbsp rice flour
Preparation
For qamar al din:
Soak the apricots in water for at least three hours
Boil water along with sugar
Into it add the finely chopped apricots and cook well
Allow the mixture to cool
After it has cooled down, scoop out the apricots and grind well
Add this paste into its cooking water and mix well
Boil for another 3-4 minutes and strain it
Note: Adding chilled orange juice would make the drink extra delicious.
For nargisi kebab:
Grind the chicken along with boiled potatoes. Cooked chicken too could be added
Into the ground chicken, add the ginger garlic paste, green chillies, coriander powder, chilli powder, garam masala, pepper powder, crumbled bread and oil
Mix everything well together
Add rice flour into it
Chicken paste shouldn't stick onto the palm. So crumbled bread should be added as required
Keep this mixture in the fridge for at least an hour
Rub oil on your palm and scoop big balls of the chicken mixture
Press the balls gently and place a boiled egg in the centre
Cover the boiled egg with more chicken mixture and shape it into a ball
Fry to crisp in hot oil.
