Named after the extra quantity of ney or ghee that goes into it, neypayasam is a rich and delicious dessert.
Ingredients
1 cup matta rice
½ cup ghee
Pinch of salt
1 ½ cup melted jaggery
1 tsp ghee
½ cup grated coconut
½ tsp cardamom powder
2 tbsp cashews
2 tbsp raisins
1 red banana (chopped)
Preparation
Dry roast the matta rice in a heated pan
Cook the roasted matta rice in a pressure cooker with water as required
The cooker should give off a whistle
Heat a pan and add the cooked rice and ghee
Stir for four minutes
Add a pinch of salt and melted jaggery and mix well
The payasam should thicken up
Heat ghee in another pan
Add the grated coconut and roast until light brown
Add cardamom powder and mix
Add this coconut into the rice mixture
Heat some more ghee and fry the cashews and raisins
Garnish the payasam with fried cashews and raisins and chopped red bananas.
