The words mappas and pappas are bound to crop up if you are talking food with a grandma from a typical Syrian Christian family. Unique to the state, or the region, these yummy non-vegetarian side dishes have found their place in the top 10 dishes from the state. Cooked in coconut milk, pappas is ideal for a breakfast with freshly made palappams or rotis. The juicy meat and creamy gravy gives the curry an aroma that is truly divine.

Ingredients
1/2 kg mutton cut into pieces
1 cup green peas
2 potatoes, sliced
3 tbsp oil
2 onions, sliced
5 green chilies, sliced
2 tsp ginger, chopped
1 sprig curry leaves
5 cloves of garlic
1 tsp fennel seeds
1 tsp pepper powder
1 tsp turmeric powder
1 tsp chili powder
1 tsp coriander powder
1 tsp meat masala
1 cup thick coconut milk
2 cups of thin coconut milk
Salt as required
1 tsp vinegar

Preparation
Pour water and salt in a pressure cooker
Cook the mutton pieces in this
Take the pieces from the water and set aside
Now add the green peas and potatoes to this water and cook well
Heat oil in a pan and add onions, green chilies, 1 tsp ginger and curry leaves to it, saute well
Grind together the remaining ginger, garlic and the masala powders together
Add this mixture to the sauteed onions and mix well
When the mixture is lightly fried, add the cooked mutton pieces to it, mix well
Now add the cooked green peas and potatoes
Pour the thin coconut milk to it and stir well
When the curry starts to boil, add the thick coconut milk and stir well
Keep it in stove for 5 minutes
Remove it from the stove and add vinegar, stir well
Serve hot with palappam
