Kulfis tell a story of nostalgia for many as running behind the bicycle-riding kulfi sellers is a fond childhood memory they savor. These creamy, sweet, saffron-milk sticks are the best way to bring the heat down on a sunny day.

Ingredients
2 cups of full-fat milk
1 tbsp powdered sugar
2 tsp chopped pistachio
½ tsp cardamom powder
¼ tsp saffron, crushed

Preparation
Boil milk in a wide pan on a low flame until the milk gets reduced into half the quantity
Stir occasionally
Add sugar, cardamom powder and pistachios, stir well
When the milk thickens, turn off the flame and let it cool
Add saffron and refrigerate it for 2 hours
Pour this chilled mixture to kulfi molds
Refrigerate overnight
To pull them out of the molds, keep them on room temperature for 5-10 minutes
Insert an ice cream stick in the middle, pull them out and serve chilled
