Small onions have been an integral ingredient in the Kerala kitchens for the past few decades. They embraced it with much love that it found a place in most of the traditional Keralite dishes. Adding whole fried small onions to spicy dishes makes them yummier, it is a known fact. In this particular recipe, the traditional chicken roast is given an onion twist as they are cooked and fried along with whole small onions.
Ingredients
1 kg chicken
1 tsp garlic, chopped
2 tbsp chili powder
2 tsp fennel seeds
1 tsp pepper
1-inch long piece of ginger
1-inch long piece of cinnamon
4 cloves
2 cardamom
2 star anise
Salt as required
1 cup small onion
1/2 cup oil
1 tbsp vinegar
Preparation
Rinse and slice the chicken into large pieces
Grind garlic, chili powder, fennel seeds, pepper, ginger, cinnamon, cloves, cardamom, star anise and salt together in a blender
Marinate the chicken using this masala
Add peeled and washed small onions to the chicken
Cook it in low flame
After the chicken gets cooked, separate the pieces and onion from the gravy
Heat oil in a pan and shallow fry these pieces
Shallow fry the gravy in this oil
Add the fried pieces to the pan
Pour in the vinegar and mix well
Remove from the stove after a couple of minutes
Serve hot with rice
