Chettinad dishes are renowned for their unique flavours, and the chicken curry is a specialty.
Ingredients
1 chicken cut into small pieces
2 big onions, chopped
2 medium sized tomatoes, chopped
2 tbsp ginger garlic paste
2 tbsp oil
½ tsp turmeric powder
2 tbsp lemon juice
Salt to taste
A few sprigs of curry leaves and coriander leaves
For Masala
3 tbsp coriander seeds dry roasted
4 red chillies dry roasted
2 tsp fennel seeds dry roasted
1 tsp cumin seeds dry roasted
4 cinammon sticks dry roasted
1 star anise dry roasted
2 tsp peppercorns dry roasted
3 cardamom pods dry roasted
4 cloves dry roasted
¼ cup coconut dry roasted
Preparation
Marinate the chicken with salt, turmeric powder and lime juice for 20 minutes
Heat the oil in a pan
Add chopped onions, ginger garlic paste and curry leaves
Saute until they turn golden brown
Add chopped tomatoes, saute for some time
Add the marinated chicken and cook it with a lid on it for 15 minutes on slow fire
After 15 minutes, add the ground masala and salt to taste and cook till the chicken is tender
Lastly, add chopped coriander leaves
