Fool dessert is a thick creamy dish made with fruits, sugar and yogurt. Both fresh and dry fruits can be used to make fool desserts. Fleshy and sweet apricots are the ideal fruits to go while making fool desserts if you want a break from regular fruit desserts. Taste it once and you will ask to get 'fooled' again.
Ingredients
250g dried apricots
1 cup yogurt
½ cup cream
Sugar as required
Zest of one orange
Preparation
Soak apricots in warm water overnight
Cook them on low flame
When they turn tender, take them off the stove, cool them down and remove the seeds
Grind them into a fine paste
Add yogurt, cream, sugar and half of the orange zest to this paste, mix well
Pour them into small wine glasses
Garnish with the remaining zest and serve chilled
