Sukhiyan is Kerala's modak which is deep fried, not steamed like in other parts of the country, especially Maharashtra. It is a traditional Kerala snack made with green grams and jaggery.

Ingredients
1 cup cooked green gram
½ cup jaggery syrup
2 tbsp ghee
2 tsp cardamom powder
½ cup grated coconut
¼ cup rice powder
¼ cup maida
Salt as needed
Oil as needed
Preparation
In a pan, add jaggery syrup and grated coconut
Mix it thoroughly on a low flame
Add cooked green grams, ghee, and cardamom powder into it
Once it is mixed properly, keep it aside
Make these into small balls
Into a bowl, add maida, rice powder, and salt
Pour water into the bowl
Mix it till it becomes a thick batter
Heat oil in a wok
Dip the green gram balls into this batter
Fry them till they become golden brown
Sukhiyan is ready to be relished as a tea-time snack.
