Ever tried a great variation of the famous tomato rice? Help yourself to this tangy rice made with healthy tomatoes and thick curd for a mouth-watering dish.
Ingredients
2 cups biriyani rice
120gm ripe tomatoes, squeezed and strained to make ¾ cup pulp mixed with ½ tsp sugar
¾ cup refined oil
1 cup onion, finely sliced
3 pieces cinnamon
10 cloves
4 cardamom
½ cup ground coconut
¼ cup ground cashew
A few coriander leaves
A few mint leaves
½ cup curd
Juice from 1 lime
Preparation
In a pan, pour oil
Add cinnamon, cardamom and cloves to it
Add sliced onions
Once they turn a brown, add the ground coconut and ground cashew nuts mixed with some water
Add enough salt
Drop the coriander leaves and mint leaves into the pan
Pour the tomato pulp into the pan and mix well
Add the curd and lemon juice to it
Stir awhile until it boils and thickens
In another pan, pour oil
Add the rice to it and saute well
Meanwhile to the onion-coconut mixture, add 2 cups of boiling water
Add the sauteed rice to this mixture, close the pan letting it cook
When the water is almost dry, cover with a damp cloth folded twice
Delicious tomato rice is ready to be savoured
