Whole chicken could be easily roasted in a pressure cooker in under twenty minutes, even if you don’t have a grill or an oven at home. The pressure-cooked chicken roast is delicious and juicy. Here is how to make it.
Ingredients
500 gm chicken
1 tsp chilli powder
½ tsp turmeric powder
¼ tsp coriander powder
1 tsp pepper powder
1 tsp garam masala
1 tbsp yoghurt
Salt as required
1 tbsp coconut oil
2 tsp crushed ginger
1 tbsp crushed garlic
Curry leaves as required
For the masala
3 tbsp coconut oil
3 garlic cloves
1 onion
Cashews as required
Curry leaves as required
½ tsp chili powder
1 tbsp tomato ketchup
Preparation
Score the cleaned chicken before marinating with the powders, yoghurt, 1 tbsp coconut oil and curry leaves
Keep it aside for at least one and half hours
Heat 2 tbsp coconut oil in a pressure cooker
Insert the marinated whole chicken into the pressure cooker
Cook for twelve minutes; first on medium flame for two minutes and then on low flame
Heat 2 tbsp coconut oil in a big pan
Place the cooked chicken in the hot oil
Roast all the sides of the chicken
Keep it aside
In the same oil add garlic, onion, cashews and curry leaves
Sauté until the raw smell is gone
Into it add chilli powder and tomato ketchup
Sauté well
Now pour some chicken stock
Add the cooked chicken back into the pan
Make sure that the masala is nicely spread on all the sides of the chicken
This whole chicken roast could be enjoyed with rice, chapathi or porotta
